過年講求好意頭,今集的酒釀丸子,用了天然色粉做成5種顏色,除了好看,亦有五福臨門的寓意。趁著今個新年假期,可以跟著食譜來做,和家人朋友一同共享,過個團團的新年吧!
份量:4人份
材料:
糯米粉(glutinous rice flour) 200g
滾水(boiling water) 80g
冷水(cold water) 65-70g
調色:(粉糰Dough 70g x 5 portions)
(白)原粉糰 (white) basic dough
(黃)黃薑粉 ½ tsp (yellow) turmeric powder
(綠)抺茶1 tsp (green) matcha powder
(紅)紅火龍粉1 tsp (red) red dragon fruit powder
(紫)紫薯粉2 tsp (purple) sweet purple potato powder
酒釀糖水/ Fermented Rice Wine Soup:
清水(water) 3 cup (750g)
冰糖(rock sugar) 50g
甜酒釀 (sweet fermented rice wine) 1 cup (300g)
糖桂花(sweet osmanthus) 適量
